Cooky-cooky a.k.a. what´s the dishes @ your home town?!

Post by d0n_th3_run_4ss4ss1n » Tue Aug 04, 2009 11:05 am

Aaaaaaalright!
As you can easily see on the pictures i´ve been posting i´m kinda sturdy (a.k.a. big, a.k.a. i´m hungry since the 1st day) guy!
And as i´ve been monitoring I ain´t the only one here.
Since there is a principle called "actio et reactio" you may have a guess now which "actio" is responsible for that "reactio"

Too shorten the thing a bit here:
I love food - Good food, greasy food, strange food, tasty food, local food, granny´s food and especially mom´s (in my case more often dad´s) food and food made of food.
Food I haven´t mention is foreign food - which is your cuisine to me and my cuisine to the most of you.

So my idea is to show each other, which food you like or better to say to put some recipes in here which are either recipes of your favourite food or your local cuisine.
For example I´d love to get a recipe for an authentic "Irish stew" or that "Haggedyhag"-stuff made of sheep´s balls!
But of course dishes from all the other countries as well: Portuguese, swedish, israelian, english, canadian, austrian, german, bulgarian, norwegian, belgian, dutch, moroccan, ukrainian, danish, american, finnish, faroe islandian, czech, russian, polish, spanish, greek, french and all other nice countries´ cuisines i´ve forgotten.

I think if you are interested in this we might get a quite interesting and diversified collection of really good food here...
I will start it up these days putting in one or two recipes for some common/local german dishes.
It would also be cool if you try to get a translation for the dishes´ in here and a short explanation of ingredients/terms for ingredients which may not be known to the most of us.
Important is to get us some good traditional fare in here and not just copying/pasting it from the internet!
Hopefully some of you are as keen on this as I am :-D
Otherwise I just keep :drink: !

So pls. lemme know your mindset about this topic!

With this in mind:
Guten Appetit! (= Enjoy your meal!)

I will start with the student classic.

Egg Fried Pot Noodle.

Ingredients:

1x Egg (2 if your hungry)
A splash of milk.

Instructions:

Boil the kettle.
Pour water in pot noodle.
wait 2 minutes.

wait 2 minutes
Add sachet and stir again.

Add the small splash of milk to a bowl and crack in the egg(s).
Whisk a bit until golden yellow.
Pur onto a medium heated frying pan.
Pull the edges in like an omelete until cooked.
When cooked break up into bits.

Drain the noodles and then add to the fryin pan.
Fry for 2 mins and serve.

Well seeing as I reside in the US, all food is our food! But any night we don't eat out (which is more frequently cause of things), we fix some sort of grain, protein item, veggies, and a fruit. Grain can range from pasta to rice, etc. Protein from steak to hamburgers to Shake-n-Bake chicken. Veggies can be well... veggies. And the fruit is normally strawberries or honeydew + cantaloupe. If we're luck, even watermelon

I know the Americas understand this but I had Biscuits and Gravy in Tulsa a few years back. Awesome, home made and fresh from the oven first thing in the morning.

To the UK biscuits are cookies and gravy is normal brown and viscous and made from the stock of a joint.. in the US Biscuits are small bread cakes and gravy is a white sauce.. thats all I remember but it was soooo good.

Recipe from home would be Yorkshire Pudding (non of your Aunt Bessie immitation) and Parkin and the infamous Barnsley Chop.

Yorkshire Pudding is just Plain flour, one egg and some milk with a pinch of salt. Mix to a batter and put in a roasting tin with a bit of oil. The key is to put the oil in the tin and heat it up til the oil is smoking a blue colour. Pour in the batter and leave in oven for about 15 mins. Careful not to open the door too much as the batter won't rise.

Parkin is an oatmeal cake with sugar and treacle or treacle and syrup mix (depends on colour required). Add a little ginger for taste and bake in the oven. Mmmmm lurvely.

You can google Barnsley Chop. :)

Viennese Schnitzel
A real Viennese Schnitzel is made from veal cutlet but it's common to use pork cutlet instead
because the other meat is way to expensive.

What you need:
  • - meat (~ 1cm or ~ 2/5 inch thick)
    - flour
    - egg(s) ....depending on how much you make
    - a bit of milk
    - breadcrumbs
    - oil
    - lemon slices
Sidedish:
  • Rice or chips / french fries / Pommes Frites
green salad or Viennese potato salad
If you like you can use a meat hammer to make the cutlet a bit more tender,
this will also make your Schnitzel occupy more space on your plate.
  1. Put flour in a bowl
  2. Put the egg(s) in a bowl and mix with a bit of milk
  3. Put the breadcrumbs in a bowl.
  4. Take a piece of meat and put it in the bowl with the flour, turn it around and cover it in flour.
    Make sure it's completely covered.
  5. Take it out and put it in the bowl with the egg-milk mixture, again, completely cover it.
Use a fork to take it out again.
  6. Put the meat in the bowl with the breadcrumbs and once more cover it completely.
  7. Put some oil in a pan and fry your Schnitzel until it's golden brown.
Make sure the oil is not too hot though or your Schnitzel will be black on the outside but the meat will still be raw.
  8. Serve with rice, chips or salad. Also put a slice of lemon on the plate.
Upon eating a bit of lemon juice is sprinkled over the Schnitzel.

If you want to get experimental you can mix the breadcrumbs with crushed cornflakes,
sesame seeds, crumbs of pumpkin seeds or whatever comes up your mind.
Gummy bears are not a good idea.

Ah but do they taste nice? Kippers and custard is a bad idea, but some people love it!!

Also, has seen the episode of friends where Racheal trys to cook and makes a beef trifle? Anyone feeling brave enough?

Good job you did so far.
So I ain´t the onlyone that likes to know bout foreign cuisine.
That´s fine.
But I never heard of this "Kippers and custard" before - tho the imagination of puttin such diverse ingredients together is a bit weird it also sounds like an experience you should give a chance - of course the pure existence of a recipe doesn´t automatically mean that it HAS to be good - but on the other hand there´s always a reason a recipe like that "survives".
I´m still thinkin bout the 1st recipe I should get up tho I made up my mind and it´ll possibly not be a typical german dish - either spinach with scrambled eggs or so called "Arme Ritter" ("Poor Knights" - don´t ask me where the name is from but to give you an idea, it is a modification of French Toast). Maybe it´ll also be Pork tongue on a sweet-sour tomatoe sauce - sounds weird as well but got it´s own taste.
I´m a bit surprised none of the Irish guys commented on or mentioned that "Haggedwuteva" - this sheep´s balls meal.

Haggis is scottish mate, not irish :)

Our own equivalent is black and white pudding, similar to blood sausage.
It's fucking awesome.
