I realy think the soldier gets some upgrade for damage free rocket jump in exchange for some health points...
Or against dmg.
The Soldier Launcher
-25%dmg
-any rocketjump damage
+ 2 Rockets in it...
something like this.
demoman will get something very interesting....
iam interested
maybe some stickys that zaap sentrys and do other stuff

Or EMP stickies that just disable the sentry gun for a time, but have a long range so the demo does't have to even place it close to the sentry. With long recharge times to make it fairer...

I don't think that the Demoman will get something that specifically targets sentries. After all, Demoman are one of the best classes to pick when you want to take out a sentry.
Rather, i believe they'd give the class something that enhances his area denial abilities, for example "Sticky grenades" that slow down people. If you get hit by a lot of them (demoman ambush), strong effect and long duration. If you get hit by just 1 or 2, zero or weak effect with zero or very short duration.
Valve may also give him new grenades that take a couple of seconds to arm.
